Egg Muffins


Ham & Cheese Egg Cups - Chelsea Lupkin

Breakfast in a bite! There are so many different ways to make Egg Muffins. Be creative and mix and match these recipes below. I do. I make a dozen or more on a Sunday morning, put them in a casserole dish with a lid in the fridge and have a quick on the go breakfast or lunch for the week. I also make them in advance for when I have overnight guests. Easy to serve the next day and everyone thinks you are a master chef.

Ham & Cheese Egg Cups

Ingredients

  • Cooking spray, for pan

  • 12 slices ham

  • 1 c. shredded Cheddar

  • 12 large eggs

  • kosher salt

  • Freshly ground black pepper

  • Chopped fresh parsley, for garnish

Directions

  1. Preheat oven to 400º and spray a 12-cup muffin tin with cooking spray.

  2. Line each cup with a slice of ham and sprinkle with cheddar. Crack an egg in each ham cup and season with salt and pepper.

  3. Bake until eggs are cooked through, 12 to 15 minutes (depending on how runny you like your yolks).

  4. Garnish with parsley and serve.

 

Cauliflower Hashbrown Cups

Ingredients

  • 2 heads of cauliflower, steamed

  • 2 c. shredded Cheddar cheese

  • 1 dozen + 2 large eggs

  • 1 tsp. garlic powder

  • 1 tsp. garlic powder

  • 1 tsp. salt

  • Fresh ground pepper to taste

  • Chives, chopped (optional)

Directions

  1. Preheat oven to 375° F. Lightly grease a 12-cup muffin tin and set aside.

  2. Drop the steamed cauliflower into the bowl of a food processor and pulse until they start to resemble a fine grain.

  3. Pour the ground cauliflower onto paper towels and twist to wring out excess liquid. Do this up to three times until the cauliflower comes out completely dry.

  4. Transfer dry cauliflower to a large mixing bowl. Add cheddar cheese, garlic powder, salt and two eggs and stir to combine.

  5. Distribute the mixture evenly throughout the muffin tins and use your fingers to press the mixture into the sides and bottom of each cup to form the nests.

  6. Bake the nests for 15-17 minutes until brown.

  7. Add a couple bits of bacon to the bottom of each cup and crack an egg on top, without breaking the yolk.

  8. Bake for 7-8 minutes.

  9. Sprinkle with chives and pepper to taste.

 

Various Egg Muffins

Ingredients

  • 6 eggs

  • ½ tbsp black pepper

  • ½ tsp salt

  • A choise of:

  • Bacon

  • Grated cheese

  • Green and red pepper

  • Cottage cheese

  • Radish

  • Chives

  • Tomato

  • Ham

Directions

  1. Chop preferred veggies, bacon and ham into small chunks.

  2. Crack eggs into mixing bowl and whisk together with salt and pepper.

  3. Place paper muffin cups in muffin tin. You can also bake directly in muffin tin if You have cooking spray.

  4. Transfer veggies, bacon, cheese and ham into the muffin cups and create Your favorite combinations!

  5. Use a ladle to pour the egg mixture into muffin cups. It should be 3/4 full.

  6. Bake in the preheated oven at 360F/180C for 20 minutes, until golden brown and puffed up.

  7. Serve hot or keep for later!
